Named for the original fruit store that occupied our space and the man that opened it, Jacques started as a small lot pulled from our completely CT grown and stainless fermented Farmhouse Wheat Ale made with a unique blend of Brettanomyces, Saccharomyces, and our house selected bacteria strains. It is 100% CT grown with Wheat and Barley from Thrall Family Farm and Hops from Hop Culture Farms and Brew Co. After 18 months, this portion was refermented for a few months on whole Stanley Plums grown right down the road in Gales Ferry by our friends at Holmberg Orchards, it was then conditioned in bottles for another 5 months until we deemed it ready. Lightly acidic and playfully tart, a vibrant expression of blended culture gives way to a bright and a juicy plum tasting evolution.

Batch 1 (bottled 1/13/2022) served in a wine glass. Pours the color and clarity of ruby grapefruit juice. Copious tiny bubbles are present effervescing under a thin, sudsy cap and adhering to the walls of the glass. Nose is quite lovely - tart and tannic with notes of yeast. Taste consistent with nose; however, slightly more tart than suggested. Mouthfeel is light in body with an aggressive carbonation and a dry finish. All and all, a very nice mixed-cultured farmhouse with many lambic-like qualities.
