Very hazy, pale straw (SRM 2). The head is formed by one inch of fine white foam and lasts a few minutes before retreating to a thin veil. A thick ring and fine coating of lace is left on a Simplii IIPA glass.
Grapefruit dominates over guava, pine resin, and a late addition of mint leaf.
Quite bitter, though sweetness keeps it under control. Opens with grapefruit, followed by pine.It is fairly simple and well done. Moderate pith reinforces the bitterness in a lingering finish. Warmth draws out some pineapple.
A full body and soft, leathery texture. Alcohol is as expected. Carbonation is lively and there is a hint of metallic.
These guys are aiming for traditional, well-done beers. Bitter cold certainly delivers on that mission, aside from the haziness. The simplicity allows their craft to show. This one will pair excellently with jalapeno poppers, nachos, and hockey. Okay, any sport will do.
