Inky is the product of much patience, struggle and a focused eye to the future. A beer that is built in pieces over an unknown time horizon, and assembled when each is ready to enhance the other.

good bourbon, smooth mouthfeel and drinker. Opinion was it was a major league effort, and they keep getting a bit better at their stouts, worth the premium price.

My favourite brewery made this. So why am I nervous? Because they make IPA like it's nobody's business, but the only time they tried something else (a saisson), it was a disaster.
But I am optimistic. Let's see.
Oh, oh. No carbonation.
Now, I know that some brewers say that this is how a bourbon barrel aged stout should be served, but I disagree. And apperantly, so do many breweries (from Canada and the home of great BBAS, the US).
The nose is spot on. Bourbon, vanilla, chocolate, and coffee in a lovely combo.
The lack of carbonation is an obvious strike. Especially, because the taste is pretty good. I am super happy that the youngsters managed this so well, but until it's carbonated, I can't give it my full marks. Worth a try for now.
