Hun is our IPA series with local wildflower honey. Wildflower honey is an adjunct we love using in our beer due to its decidedly non-static nature. It is made by bees that have collected nectar from local sources, and as such, the taste and composition of the honey will change depending on the season and the variety of flowers in bloom at the time. It is a product deeply influenced by annual fluctuations in agriculture that scratches our unending desire for unpredictable drifts between flavours we love.
This particular version features wildflower honey from Humbervalley Honey in Bolton, Ontario. Their wildflower honey is directly influenced by the flora found around the Humber River Watershed.
This is without a doubt one of our favorite renditions of this beer. We added approximately 30% more honey than usual, and then dry hopped it with Citra. We taste tangerine, papaya, peach, sweet silky honey, and delicate floral aromatics.
