The monthly DIPA series is our neutral, hop ready canvas to play around with all things DIPA. The goal for the series is not only to bring you at least one DIPA per month, but also to allow us to push our base DIPA recipe in any number of directions with the goal of ultimately tweaking, refining and improving every DIPA in our lineup.
This month we tried a modified malt base that is pale in color and then hit it with a hefty dose of our selected Citra, Simcoe and El Dorado and then salt bae-d in some Galaxy for a nice accent.
We taste an intense display of ripe citrus, pineapple and tropical fruit.

The February 2023 DIPA was a big miss. so here is hoping for something better.
Pours thick and milky yellow, with a sexy head. Looks great. The nose is of citrusy hops with some honey notes. The taste is actually a bit milky as well, but is muted at the front end. Almost all the taste is at the tail end, which is an off-balanced tropical fruit montage. Quite tart but silky smooth.
Better than last month's DIPA but not as good as those of yesteryear. I would be shocked if there were no New Zealand hops in here, which to me is an almost sure way to put things off balance.
