Northbound Gravity Sessions No: 02

The thirst for knowledge, litterateur, fine arts (and big bold flavored IPAs) drove us into a more poetic approach to dry hopping for the second installment in the Northbound Gravity Sessions series - and so the “everything in moderation, including moderation” dry hopping method was born. Hidden in this IPA’s hazy depths, courtesy of large portions of naked oat malt, torrefied wheat and flaked oats, lies absurd amounts of Simcoe and Vic Secret hops. Expect tropical fruits, ripe stone fruits, citrus and all other buzz words associated with the style - we’ve more or less ticked all the boxes on the aroma chart with this one.

Copenhagen 5/6 2020. 44 cl can from Mikkeller web-shop. Apex's usual can- design this time with the head of a disheveled, manic Ostrich with a filter cigarette.

Pours hazy, milky yellow with a small but consistent white head. Settles as thin, uneven layer of foam just covering the surface of the beer. Substantial lacing.

Aroma is medium intense with a fairly strong sweet odor of exotic fruit with a touch of decay accompanied by strong citric notes of grape fruit and lime.

Light carbonation. Thick, soft, smooth, fat, lightly tingling texture.

Flavor is intense with a fairly strong sweetness followed by medium strong citric bitterness. Aftertaste is sweetish with a citric undercurrent. Lingering. Finish Is semi-dry with a boozy twist.

Solid heavy DIPA with a strong, sweet, boozy base and a nice bitterness on top.

Pours a hazy pale yellow with fine foam that leaves a lot of clingy lacing.

Smell is juicy with notes of citrus mango, pineapple and a hint of vanilla.

Taste is soft and juicy. Very hoppy, with notes of mango, citrus and vanilla. Soft bitterness and ahint of licorice on the finish.

Mouthfeel is medium, soft and pillowy. Well carbonated.

Overall, a very nice NE IPA.
