Originally brewed for the amazing 2019 @brewskival beer fest and now triumphantly resurrected. We’ve stayed true to the original recipe but slightly tampered somewhat with the water profile i.e tweaked the salt additions to fit our current (endless?) line of DIPAs. Boatloads of Cashmere, Citra and Vic Secret hops over a malty backbone of finest Maris Otter, malted oats and a pinch of flaked wheat results in a thick hazy IPA saturated with hop flavors of citrus, candied orange and mango.

Maris Otter Extra Pale, Naked Oats, Torrefied Oats, Flaked Wheat.
Hops:
Cashmere, Citra & Vic Secret.
Yeast:
WLP066 London Fog

Copenhagen 19/2 2021. 44 cl can from Best of Beers web-shop. Apex’s usual can design in a strange combination of orange and pink with two Snakes as poster animals.
Pours opaque, hazy pale yellow with a big white head. A bit bubbly. Settles as thin, almost transparent layer of foam just covering the surface of the beer. Crawling up the sides of the glass. Substantial lacing.
Aroma is intense with a sweet odor of malt and exotic, fermented fruit mingling with citric scents. Mango, passion fruit and peach. Sharp citrus and grapefruit. Mustard.
Medium strong carbonation. Medium thick, oily, lively and tingling texture.
Flavor is fairly intense with a medium strong sweetness followed by a stronger citric bitterness. Aftertaste is bitter and lingers for a while. Finish is dry
Potent but not overly boozy DIPA.

Smell is juicy and a bit sweet with notes of peach, apricot, citrus and lemongrass.
Taste is juicy and a bit sweet with a solid bitterness. Notes of peach, citrus, apricot, grass and Lakrisal.
Mouthfeel is medium, soft, pillowy and well carbonated.
Overall, a very nice DIPA, maybe a bit understated.
