This collaborative wizardry started with our new favorite DIPA malt-bill; extra pale Maris Otter, malted oats, protein rich spelt malt and a hefty amount of unmalted wheat and fluffy oats. A big dose of Citra Incognito on the hot side and fermented with our trusty house yeast - (Lilla) London Fog. Lastly we double dry-hopped the holy hell out of it with Riwaka and Nelson Sauvin hops. The result is a thick, foggy, 8.0% abv Double India Pale Ale with notes of mango, pineapple, strawberries and diesel.

Copenhagen 30/5 2023. 44 cl can from Best of Beers web-shop. Light green can in Apex's usual design with a strange cranium of a bird as poster animal.
Pours opaque hazy, golden yellow wih a mid-sizes white head. Settles as thin, almost transparent layer of foam struggling to cover the surface of the beer. Clinging to the sides of the glass. Moderate lacing.
Aroma is fairly intense with a sweet fermented odor of overripe Stone fruits mingling with a more subdued citric scent. Peach and mango. Alcohol.Grapefruit and lime.
Soft carbonation. Slightly thick, oily, smooth, lightly tingling texture.
Flavor is intense with a strong sweetness followed by a medium strong bitterness. Aftertaste is bitter with a sweet undertone. Lingers for a while. Finish is rather dry.
A fine DIPA which is very welcome to insert its talons.

Pours a hazy light orange with thcik, fluffy head that leaves a ton of lacing.
Smell is juicy and a bit dank with notes of gooseberries, citrus, melon, white wine and grass with some spicy hints.
Taste is juicy, dank and spicy. Notes of gooseberries, orange, grapefruit, grapes, melon and white wine. Soft bitterness with a slightly sharp, diesely sweetness.
Mouthfeel is full, chewy, pillowy and well carbonated.
Overall, an exceptional NE DIPA, powerful but balanced. Apex's best so far.
