This blend consists of two spontaneously fermented beers inoculated overnight in our coolship in December of 2019 and March of 2021, which then spent several months refermenting with two pounds per gallon of locally grown tayberries and 1.5 pounds per gallon of local plums before being bottle-conditioned with honey.

Poured from 500mL bottle into my BeerAdvocate teku. This batch is from 2021.
Appearance: rich, beautiful amber hue with a mostly-clear body and a finger of fizzy pinkish foam atop. Head doesn’t stick around too long, but that color is amazing!
Smell: slightly tart and moderately sweet with a nice saison funk. The fruit is bright and fresh and very berry-like, though I admit I couldn’t pick a tayberry out of a lineup. I also wouldn’t immediately guess plum, but whatever the synergistic effect is, it’s great.
Taste: very tart with a more subdued fruit flavor and sweetness, and more of that farmhouse funk coming in at the end. I think the tartness here may be a bit much; there could be more sweetness for balance or something, I think. Still good, but not as lovely as the aroma.
Mouthfeel: medium-light body with a moderate carbonation and creaminess.
Overall: a good spontaneous-ferment sour … if a bit too sour for my taste. That aroma, though, is pretty wonderful.
