Brewed in June of 2020, in anticipation for the harvest season. Composition of Pilsen malt from Valley Malt, raw Redeemer hard red wheat from Nitty Gritty Grain company, and aged Styrian Golding hops. We open ferment in an oak foudre with our resident mixed culture. Post primary ferment the young beer goes to rest into Cab/Sav wine barrels. In September, we moved the beer onto local Yellow Anne raspberries from Fisher Brothers Farm and wildflower honey from our Nordic Farms Apiary. Finally it rests for another slow fermentation before conditioning in the bottle.
