Look: A lovely amber-red in color on the pour, which causes a lofty off-white head to billow up to a pillow and refuse to settle, slowly doing so and leaving sheets of lacing behind
Aroma: Cara cara orange, pink grapefruit, tangelos, freshly baked bread, light peach, wafts of yeast phenolics, red apple skins, and caramel
Taste: Opens up with a punch of rich bready malt that is quickly shoved aside as the hops storm in. Sharp grapefruit, navel and cara cara orange, and tangerines all head it up and develop nicely as peach and some interesting yeast phenolics peek in and out. Caramel helps close it out along with apple skins, more yeast funk, and a bold bite
Mouthfeel: Full, medium-high carbonation, and medium-strength dryness on the finish
Overall: This is some delicious stuff. My second beer from these folks and one I tried before buying and it grabbed me with its depth, old-school WCDIPA feel and ABV, and unique angle from what I was told was a Belgian yeast addition to finish it – and it shows. A tasty DIPA with a nice reasonable ABV and a ton of citrus presence, along with the interesting phenolics and funk from the Belgian yeast which interplays well with the beer as a whole and works well, in my opinion.
