Part of our 1-barrel experimental sour series, this beer is really special to us. We pulled a portion of Sauna beer, which was brewed in November 2018, and added a mix of lactobacillus, Brettanomyces, and Saison yeast. After a mixed fermentation we added more spruce tips and lemon peel before aging for 3 months! The result is a puckering, citrusy, and lemony sour with a light earthy backbone reminiscent of the spring melt in the Duluth woods. Expect a very complex and evolving aroma and flavor that changes with each sip you take! Lots of fresh pine, lemon and citrus notes, with a subtle earthy background from the Brettanomyces and rutabaga. The finish is clean and dry. Be sure to drink past the first sip which will be very SOUR, but it mellows with each sip thereafter!
