I am reviewing this from notes. The last few Mobius Trips I have consumed have been excellent sippers. I am looking forward to this one with Raspberries. I am serving the beer at 44 degrees and in a Tulip glass. The pour created a frothy, airy, two-fingered light pink head with little head retention. The quick dissipation left no lacing on the glass. The color resembles pink grapefruit and is hazy, with many carbonation bubbles. The haziness comes from raspberries and yeast.
Nosing the glass, I smell raspberries, lemons, earthy notes, funkiness, and fruity sweetness. After swirling the glass a few times, I notice acidic acid, herbal, floral esters, and lightly toasted malts. The sour aromas are moderate.
Sipping the glass, I taste tart raspberries with an undertone of fruity sweetness. The beer develops further on the palate with acidic acid, floral blossoms, light grass, lemons, lightly toasted malts, and funkiness as I continue sipping crackers, earthiness, and honey.
The mouthfeel is carbonated and tart, with a crisp and dry finish. The body is medium-light and has medium-high carbonation.
The wild ale is incredible; the raspberries add a delightful tarty sweet addition. The beer is well-balanced and not overly sour. I enjoyed how Saltfire crammed this beer full of raspberries but did not drown out the base beer—a delightful sour. I'm looking forward to the next Mobius Trip.
