This golden ale sour solera was aged in our oak foeder before an extended secondary fermentation with Engelmann prickly pear nectar from our friends down at the Arizona Cactus Ranch outside Tucson. The family owned ranch boasts some of the best nectar from these beautiful flat padded cacti you can find anywhere and we have to agree. It's a truly beautiful and unique beer that we're thrilled to share with you.

The beer was brewed last fall. Prickly pears hold a special place in my heart. My grandfather used to make prickly pear jam and we would eat it on fresh dutch oven biscuit. Ahh, memories, love you, grandpa, you have been gone too long. The beer is 44 degrees and served in a tulip glass. The pour of beer created a light pink airy foam. The head retention was quick and left no lacing on the glass. A small ring around the glass is the only thing left of the head. The color of the beer is reddish-pink and clear. An elegant-looking beer would have like to see just a little longer head, but that is nit-picking.
Lovely prickly pear, wheat, lightly toasted malts, and a touch of funk for the initial sniff. Nosing further, I detect cereal grains and light lemon tartness. The scents are bright and juicy.
The flavors in the beer are funky, cereal grains, a touch of fruity sweetness, lightly toasted malts, yeast, earthiness, lemon tartness, and oak.
The body of the beer is light, high carbonation, and a full finish.
The mouthfeel is crisp, bright, and tart.
The beer is awesome. I only got the prickly pear on the nose, yet the flavor of the fruit did not come through as much. The fruit is delicate and for it to even come through at all is a feat. The wild ale is an amazing beer, looking forward to the next Mobius.
