The next couple of beers are from Saltfire Brewing, which is all new to me. I enjoy what Saltfire Creates, but I have never had a Saison. I am using a tulip glass and serving the beer at 42 degrees. The pour created a frothy, airy, two-fingered white head with average retention. The quick dissipation left some lacing on the glass. The color is straw yellow with light golden yellow charting at SRM 2 and clear with many carbonation bubbles. The appearance of this beer is average for this style.
Nosing the glass, I notice lemon, ginger, crackers, pepper, earthy, honey, and light floral blossoms. Smelling the beer again, I detect lightly toasted malts and have a salty sea air nose with a light funkiness.
The first sip I noticed was of ginger and lemon. However, the ginger is not spicy. The lemon zest adds a nice balance to the overall beer with a lovely citrus oil. The Saison is slightly funky and floral, with lightly toasted malts, honey, white pepper, salty air, and earthy.
The body is light and has high carbonation. The mouthfeel is carbonatic and finishes crisp and refreshing.
The ginger and lemon are pungent yet mild, mingling well with the Saison as co-stars in this beer show. The beer is refreshing; I wish I had this as a sipper this summer instead of on this chilly December night. It is a delightful beer; I want to try the OG and see the difference.

the second version of this i have had, a neat combination, ginger can be tricky, but its good in this, and the lemon is well paired with it. i think the yeast in it is a little safe, its not so estery and intense, but it is a bit generic, which makes it uninteresting in the place i want this style to be interesting, but the added ingredients make it neat, summery and distinctive, not over flavored. hazy but bright, straw colored and a little thick, but super heady, creamy and effervescent looking, really attractive even with the density. the nose is ginger forward and a little sweet, good with subtle pear and white wine esters from the yeast, which is sort of belgianish to me, light banana in the mix, but the ginger doesnt even really hit spicy, not that it isnt real, just that its not like, from the earth and fresh juiced, it seems diluted a little bit, even though its obvious, and the lemon is clean and lightening on top of the starchy wheat base, lots going on but definitely cohesive still. the ginger almost comes across candied even though the beer isnt sweet overall to me, lemon adds nice acidity cutting through some of the grain weight, and the yeast is samey but subtle enough to not really stand out, neat balance in this, and while i kind of wish for more intense up front real ginger spice, i like the way it all comes together. lots of body but also lots of carbonation, and this has fine flow. neat summer saison here, cool series, i need to try more of them!
