I am going to pause the cellar purging and review some Saltfire beers. I am starting with the Styrian Wolf hop series. I had never heard of these hops, so I did some reading. I am using a tulip glass and serving the beer at 44 degrees. The pour created a frothy, creamy, two-fingered, off-white head with above-average retention. The somewhat slow dissipation left loads of lacing on the glass. The color is a deep gold with straw yellow hues, charting at S.R.M. 6, and transparent.
Nosing the glass, I smell mangos, lemons, orange, light floral bouquets, grass, and lightly toasted malts. Smelling the glass, I notice strawberries, light malty sweetness, light black pepper, and a hint of bay leaves. The hops are intense and bright with a solid malt backbone.
The flavors start with mangos, lemons, oranges, herbal and floral esters. Sipping the glass again, I taste strawberries, bay leaves, lightly toasted bread crust, malts, and grassy. I notice some peppery notes, anise, and tropical fruit at the back end.
The mouthfeel is astringent and bitter, finishing dry. The body is medium and has medium-low carbonation.
SaltFire has brewed a delightful I.P.A. to sip on a chilly fall day. The flavors are bright and not overpowering, making it easy for any I.P.A. fan to enjoy. I am enjoying this series they are producing, highlighting unique hop strains.
