Mobius Trip, Brett Saison is the last SaltFire Beer I am reviewing today. I am serving it in a tulip glass at 44 degrees. The pour created a frothy, airy, two-fingered white head with average retention. The quick dissipation left no lacing on the glass, leaving a light foam layer covering the beer. The beer is golden yellow with light straw hues, charting at SRM 6, and slightly cloudy. The appearance is above average for this style.
Nosing the glass, I smell the Brett, a funky barnyard, horse blanket, and earthy dirt. The Brett is potent but balanced with other flavors of crackers, lightly toasted malts, floral esters, lemon, and a hint of honey.
The flavors start with the Brett profile of funky barnyard, horse, earthy dirt, acidic acid, and a light band-aid note. The saison has crackers, honey, lightly toasted malts, bready, floral, and hints of lemon.
The mouthfeel is tart and tannic, and the finish is dry and crisp. The body is medium-light and has high carbonation.
The saison has an intense, rich Brett flavor and aroma, and it is balanced yet has a firm malt backbone—a delicious beer to end this day with.
