Drank from a 500 ml black wax dipped bottle purchased on Tavour
Bottled on 1/19/23
Served in a tulip
The beer poured an oily and fuller bodied, near pitch black hue. A thin, caramel colored head topped the body but quickly dissolved. Minimal spotty lacing trickled along the glass.
The aroma was outstanding. Bourbon barrel notes came through big time. Loads of dark fruit character as well. Raisins, figs and plums were apparent. Very Port-like. Vanilla was also noticeable. Good dose of brown sugar sweetness too. The Port character intensified as the beer warmed. A hint of dark chocolate was also detectable.
The flavor profile was very similar to the nose but perhaps even more complex. Rich malty notes led things off. Nice mix of sweet caramel and roasted malt notes. Dark fruits came through strong in the center. Like the nose, quite raisiny and very Port-like. Loads of sweet booziness. Vanilla was also noticeable. More roasted malts on the back end and in the finish. Boozy notes lingered after the swallow.
The mouthfeel was fantastic. Full bodied and quite syrupy. Creamy, slick and smooth on the palate. The liquid contained a fine, moderate effervescence that fluffed up nicely.
All in all, The Interception of Entropy - Coffee was an absolutely outstanding beer and one of the best stouts I have tried in a very long time. My only knock against this was that the coffee was completely undetectable.

poured from a 500mL bottle into a perennial snifter. pours dark brown but gathers in the glass a shiny black with the thinnest of khaki foam colored ring around the rim if the glass. bourbon heat / sting on the nose as well as acidic coffee and bitter chocolate. taste is a much more well executed blend of slightly bitter chocolate, coffee and bourbon barrel. i’m not sure if the barrel just covers up a lot of the coffee or if the coffee and barrel just don’t mesh well together but i like the way this tastes a lot more than it smells. thick, full mouthfeel with just enough carbonation. really nice bourbon barrel-aged coffee stout. lots of barrel. kind of wish there was a little more coffee but this is solid for sure.

Appearance: Pours pitch black with a beige film that fades to a ringlet of bubbles with an iceberg in the middle; leggy with a few speckles
Smell: RIch coffee merges with chocolate and blends with Bourbon aromatics creating a warm caramel tone
Taste: The Bourbon barrel complements the beer from start to finish with a caramel tone lingering; the coffee and chocolate are more apparent, up front, with the Bourbon and the oak building through the swallow
Mouthfeel: Full bodied with low carbonation
Overall: Another masterful BA stout from Incendiary; a harmonious blend here
