We want to change the way people think about beer. We specialize in corn-based, gluten-free, Pre-Columbian inspired beers, specifically Chicha and Pulque from the Inca and Aztec cultures respectively.

a really interesting new spot on south broadways specializing in corn based "beers" called chicha, which i think comes from peru or maybe venezuela, wither way, calling it beer is a stretch to me. sure it might be fermented with ale yeast, but i dont believe it has hops, and the only grain is corn. they serve it in a little clay cup which is kind of neat, its totally still, and is spiced with autumnal spices and fruit in some recipes, interesting stuff and quite good, but to me more like a chai tea than a beer, enjoyable in small doses, not sure what i really think of it, is it technically even beer? their space is rad though, a cool open feel up front, neat lighting and tons of plants, a walk up bar without any seating. they only had three of their own on when i was in, one with no alcohol, but they did have some guest beers from intrepid sojourner, which i believe is where they brewed some batches before they had their own place, so at least you can still get an actual beer in here after the chicha sampling. the space really is nice, the equipment in the back is gorgeous and shiny and new, and i think its necessary to have a niche like this as a new brewery in denver now, i hope they do well. service was decent, unremarkable, the girl i spoke with and ordered from didnt seem to know much about the product, which seems weird to me, given it being so unique here, im sure they get a lot of questions. ill swing back in here in a few months and hope for some new flavors, its interesting stuff and tastes good. what do others think?
