A blend of two pale sour beers, one aged for 12 months in French red wine barrels, and the other for 10 months in Kentucky bourbon barrels, with different brettanomyces wild yeast strains and lactic acid producing bacteria. Additionally, the beer has been conditioned for six months on locally-sourced quince, sea buckthorn and honey.

Copenhagen 3/5 2024. 75 cl chubby bottle from Beer Me web-shop. White label with a lean wolf gnawing a one with a full moon in the background. I m drinking the 20222 edition.
Pours opaque unclear golden amber with a mid-sized white head. Bubbly. Settles as a fragile, thin patch of foam unable of covering much of anything. No lacing.
Aroma is medium intense with a mild fruity sweet odor with a touch of honey soon overpowered by strong tart scent of unripe, green fruit. Light whiff of funk. Citrus, tart gooseberries and currants. Sour cheese. Acerbic. Rough edge of sea buckthorn.
Medium strong carbonation Thin, oily, tingling - on the verge of being fizzy - texture.
Flavor is fairly intense with a light sweetness followed by a strong tart sourness. Aftertaste is sour. Lingers for a while. Finish is tart and dry.
