Collaboration with Noble Café.
A: Pours a dark brown color with a very light beige colored head that quickly dissipates to a crown. The lacing is very good considering the low ABV and the poor head retention.
S: Smell is medium to heavy in intensity. Coffee notes are pretty blatant with undertones of cherries, leather and smoke. From the malt you get cocoa, vanilla and a little bit of coconut.
T: Taste is also medium to high in intensity. Again, the cold brew coffee notes really sticks out with undertones of cherries, leather and smoke but also prunes and raisins. From the malt, you get the vanilla, cocoa and coconut which is a bit stronger than in the smell. The whole beer is very coherent and really has the natural sweetness you get in cold brew coffee.
M: Mouthfeel is a bit watery for the style. But there is a nice smooth feel that comes from the cold brew coffee. Carbonation is very light and fluffy.
O: This is a very very solid coffee beer. I don't know if it's because the cold brew coffee used is of such a high quality that it really improves the base beer (I know the Noble coffee shop and it is in my top 3 coffee spot in Montreal), but it still is a very delicious beer at a low-ish 6.5%.
P.S.: Considering the beer has already vanilla, leather and coconut notes, an imperial version of this in bourbon barrel would be totally insane.
