Pours black with a couple fingers of mocha foam that bubbles away rather quickly. Thin oily, caramel-colored legs form the glass after each swirl.
Aroma is stark, hitting cinnamon first, and holding on cinnamon and spices. Deep roasty and toasty malts sit underneath and alongside fudge, molasses, dark fruits, and brown sugar. Barrel notes seep in around the corners, elevating the intensity without bringing excess heat. Cinnamon note is strong and central, and yet remains within balance of the profile. That cinnamon quality helps dry things out, keeping any dark fruit notes from lingering too long, helping establish better balance.
Flavor profile is roasty and toasty malts with an undercurrent of cinnamon, spices, molasses, fudge, toffee, and dark fruits. Malts hit hard, with the rest of the notes tumbling through in no particular order, each of which adding a little bit of sweetness. Taste is sealed up with a barrel finish, which brings just a little bit of heat with it to draw things to a close. From bold and lightly bitter, to sweet, to heat, the dynamics keep it intriguing, and shift well enough between to retain balance.
Mouth feel is medium-thick with a consistent, semi-low grit to the texture. Effervescence is mild, allowing the weight and light grit to the deliver the hefty notes.
Overall, barrel character is great here, adding a little bit of spry heat at the back to keep things focused. Cinnamon is really forward, and yet a wonderful centerpiece.
Served in a 15.5oz Spiegelau tulip from a 16oz can.
