very unique, tart, and interesting beer, maybe slightly less refined than it could be, and not quite as epic on the rhubarb as the tilquin rhubarb lambic we had within a day or so of this one, but a really cool expression of the rhubarb in this, a lovely wild yeast complexion, and a pretty compelling beer overall, exceedingly expensive, but the curiosity gets me every time with these guys, and i love the simple but elegant and straightforward packaging, very old world. doesnt appear to have taken much color from the rhubarb, hazy and close to still, or at least without much head, there are some bubbles on the palate, orange tinted, some sediment at the bottom of the bottle. aroma here is super sharp, medicinal, and astringent, sour on its own im sure, but the rhubarb exacerbates it for sure, like sour candy, some sweetness from the grain behind it, subtle red raspberry and white currant character, some wet wood, husky grain, lemon, white wine, white pepper, and musty basement funkiness. the flavor is all of this, but the rhubarb is juicy and sour and easy to place, acidic the whole way, drying on the teeth and tongue, sour pink candy, orange nuance, cardboard and paper, oak and new pine lumber, dust, slight green vegetal character, trace vanilla, red wine notes too from the barrel treatment, a cool feature of this, prune and blackberry way back from it, the tannins too. its really sour, even pushing vinegar acidity but with that unique pithy tang and even bitterness from the rhubarb itself, no denying its authenticity. this hangs on the palate in a pleasant way, quite malty really, all the elements really work well together, and while i found this a little rough and raw overall, its hard to not be impressed still, mature and interesting all the way, a cool expression of the rhubarb, and a beer im glad i bought, spendy as it was. really stoked on these guys right now!
