the recent rash of brut ipa types has taught me that perhaps they are only scientifically dry, like, maybe even though this measures dry, it still drinks a little sweet, there is perceived sweetness here, and whether its there or not, it takes away from my enjoyment of this one, but the issue is not unique to this beer specifically, rather its something i have picked up on in a lot of these, where the higher mash bill leaves some residuals that even though its clear and the enzymes have done their thing, there is still a density and almost honey flavor to a lot of them. i think i dont love brut ipa, or maybe there just arent a ton of awesome ones out there. as a first beer from this new operation though, this was pretty good, with a tropical fruity hop profile that ranges from tangerine to lemon to cantaloupe and pineapple, and almost no bitterness at all, which i also think exacerbates the perceived sweetness. if it had a little more carbonation it would really pop, but in the absence of that, it drinks about like a normal ipa, minus the bitterness. fresh and flavorful, pretty clean, simple on the grain side for what all is actually probably in here. not my favorite one we had in here, but pretty solid for a first attempt.
