Brewed in collaboration with Beaumont’s very own Chartier, this ain't just any old stout, we pulled out all the tricks and then some! Starting with a softer than usual water profile we added loads of flaked oats, caramelized sugar and milk sugar to an already very chocolate heavy malt bill to mimic the velvety brownie base. To that we added cocoa nibs, salt, maple syrup, maple syrup whiskey, pecans, and Madagascar Bourbon Vanilla! We finished this beer with one (maybe 5) more maple syrup kiss. It easily one of our most complex beers to date, but honestly we have just been enjoying this one for the nice warm hug that it is.

Pours a slightly muddy brown with a couple fingers of tight bubbly dark tan head.
Nose hits with a bit of metallic char, earthy hops, nutty with cocoa notes and a touch of maple.
Tastes of caramel maple sweetness, nutty, cocoa, and a big hit of vanilla - there is a bit of bite from the whisky and a floral and earthy note - soft backend espresso like bitterness.
Remarkably seemed thinner than anticipated yet somehow a brisk carbonation pushes through to a creamy sweet finishing mouthfeel.

A pecan maple whiskey fudge brownie dessert stout.
Appearance - Pours a dark hazelnut brown with four fingers of frothy tan head.
Smell - earthy, leafy, floral, and weedy hops, bourbon, maple syrup, pecan, cocoa, fudge, roasted malts, hint of coffee bean, and earthy yeast.
Taste - earthy, leafy, floral, and weedy hops upfront. Then it goes quickly into the bold notes from the bourbon, maple syrup, and pecan. The cocoa, fudge, and hint of coffee bean come through next. The roasted malts and earthy yeast round out the brew.
Mouthfeel - Medium bodied with moderate carbonation. Finishes a touch on the sweet side from the maple syrup but the bourbon and other elements balance it out.
Overall - This one must've been a challenge to brew but '88 got all the elements on point and brewed a beer that on paper sounds cloying but it was just the right amount of sweetness to help the other elements of the brew shine as well. A nice treat on this frigid evening here in Cowtown.
