This magical amber concoction started as a collaboration beer with Terrestrial Brewing, "Je Ne Sais Quoi Biere de Garde." Originally fermented solely with Brettanomyces, a semi-wild yeast that imparts a complex blend of flavors and aromas, it went into a handful of red wine barrels and aged for the past 9 months. An additional fermentation with Brettanomyces ensued, amplifying the acidity, dropping out a touch of malt sweetness, and rounding the edges of the bold punch of red fruit aromatics. Less a departure from its former self, more a new stage of growth and development. How's that for the concept of time? Get to the bottom of it.
