a unique beer here, as they all were, featuring a heritage grain, this time red russian wheat if i understand it correctly. i know almost nothing about it, other than that it was grown and malted locally and is part of their mission to feature esoteric grains in malt forward beers. i liked everything i had in here, but i liked this one among the best of them. its light drinking beer, but with a lot of flavor, earthy in a way im not sure i have experienced before, and i think i now know what this malt tastes like in a beer, which is a pretty cool accomplishment i think, definitely their stated objective, and successful for sure, at least for me. the beer has a wheaty taste and feel about it, but its dry, has some light peppery and herbal notes, and a lot of minerals and even soil characteristics, some unique terroir on this for sure. its smooth, minimally hopped, and sort of liquid bready to me, feels almost healthy as i drink it, like i can feel nutrients entering my body each time i take a sip. its not quite crisp to finish, but the fermentation is relatively clean on it, and the almost raw character of the pale grain is whats left on my palate at the end. definitely an experience to drink this, which i guess was true of all the beer i had in here, just incredibly original and i love how the rest of the beer is so simple, in service of the special malt. some hops too here, but appropriately dosed. like nothing else i have had before! they really have a cool thing going on in here! perhaps the most drinkable beer of the lot this one.
