my favorite and objectively the best of the beers i had while i was in here. its a stronger ipa with a ton of hops and spiked with high quality local honey late in the boil. the guy tells me its for the alcohol, which i get of course, but there is some character left from the honey and its not just sweetness balancing the hop bite, which is intense, its got natural floral and springy tones, really softening and pleasant, this seems more refined than the other beers i had, cleaner on the fermentation, and the little bit of alcohol coming through is perfectly within reason. a light amber color to it, some chill haze, but a nice frothing almost creamy white head from the tap. some greenness and bitterness to the nose and taste right away, simcoe sort of grapefruit character, pine as well in here, weedy and oily to me, but the honey stands out a lot, both with the lightly toasted barley malt character and on its own, sweet and nectarous, ambrosial even, bit the bitterness slaps me quickly. better carbonation than the others, still a little unclean and amateur on the ferment, but this was hands down the best i had here. love honey in beer, especially hoppy beer, and this sums up why pretty well. solid recipe, just okay on the execution.
