Uniquely brewed and blended in Australia with the unique fermentae and terroir for their precise place on the planet, the spontaneously fermented ale of wildflower Brewing and Blending might as be straight out of Brussels.

Bright pink in color and cast in a foggy mauve gaze, St Phoebe's inviting yet mysterious translucence leads into a nose of funk and fauna with bold notations of juicy raspberries, red wine and a twinge of spice. Its early sweetness is juicy and candied as the early malt influence is subtle, simple and succinct.

With a slight nod to berry cobbler, the beer quickly shrugs off its maltiness and the ale quickly favors a fruity center that's filled with macerated raspberries just as the undertow of sourness swirls with dry cider, red wine, gooseberry, lime, lemon and cranberry. Trending dry and spicy, the elements of vinous soaked oak links up with the yeast spices of peppercorn, cinnamon and a slight medicinal note for balance, dryness and utmost palatability.

Medium light in body, the beer's sourness takes hold in finish as the piquant and brisk acidity washes away the thirst with ease. Largely what wine spritzers strive to be, the beer shares an earthen character of weathered woods, saddle leather and cellar-like conditions that float gently above the senses in an intangible retro-olfactory kind of way.

375ml bottle, packaged 13/6/18, $16 and some change.

It pours a hazy amber gold with a slightly pinkish head of foam though it's mostly white. It's long lasting and there's some nice lacing.

Raspberries smell, tart indeed, light funk, quite woody aromas from the barrel. Little bit of fruity sweetness.

Wonderful burst of tart raspberries on my palate. Oaky, woody, mild funk. Very tolerable level of tartness.

Good mouthfeel for the lowish abv.

This, to me, is amazing!!
