1 - 8yr Weller, Heavy Chocolate Base, 15 month aging period.
2 - Wild Turkey, Maris Otter Barleywine Base 1, 28 month aging period.
Catalyst is our non-adjunct lineup meant to showcase how unique barrel aged beers can be depending on the barrels chosen and time spent developing in them.
For this iteration, we decided to take some of our 28 month aged Barleywine base beer and blend it evenly with an incredibly chocolate forward 15 month aged stout recipe. The result is a beautiful blend of flavors like chocolate covered dates, light caramel, and subtle smoke.

500 ml bottle into a tulip snifter. A 2025 release, had 6/21/25.
Pours almost black and opaque, with a brief head and no real lacing. Aromas of bourbon, caramel, chocolate, oak, raisin, some brown sugar. Smells lightly fruity. Similar flavors: bourbon, chocolate, oak, roasted malt, some caramel and brown sugar, raisin as it warms. Smooth, a very good fuller body, appropriately carbonated.
I like when these guys do a barrel only release. This isn’t quite the best of the “no adjuncts “ society from them, but it’s really good. For me, the aroma here is a barleywine, and the flavor is pretty balanced. There’s a strong barrel presence and lots of oak.
