Catalyst: Sherry + Bourbon - Barrel Aged Stout
Catalyst is our non-adjunct lineup meant to showcase how unique barrel aged beers can be depending on the barrels chosen and time spent developing in them.
For this iteration, we used a single barrel that had first aged in Willett Bourbon for 14months, and then Sherry barrels for 6 months. The flavors imparted by the barrels and base can be described as chocolate covered raisins, intense oak, roasted walnuts, caramel, lingering bourbon heat, and a subtle finish of mixed baking spices.
