another gorgeous beer from these guys, this one done with skinless pinot noir grapes to the tune of 45%! that said, its also another beer that would benefit from being brewed again, taking the lessons learned and applying them to a future batch, which would take this from incredible to all time, i wish they werent just one and done with most of these, because a lot of them are on the precipice of epic status. this is delicate like champagne, and carbonated like it too, with a strong and sharp fruity wine profile and a very light malt complexion, tannic and clean at the same time, shockingly well hidden alcohol strength here too, like it drinks way more delicate than it should for what it is, and the essence of the grape is so fully appreciable here, its truly special. strawberry, cranberry, and elderflower dance on the tongue with this effervescent feel, a little tang and a little sweet in the middle, rosewater and high carbon minerality, white peach, its sexy as can be, and was a mighty fine compliment to the oysters in here, which were among the best ive had in denver, the vinegar of the mignonette so perfect with the saline oyster and the vinous brew, almost erotic for me, certainly sensual. the tiny little pour is tantalizing! these guys are making some of the best and most interesting beers in denver and beyond, if you havent been in yet, what are you waiting for?!

L:. Pours a dark copper gold color with a small fizzy white head and no lacing on the glass.

S:. Sweet malt, a nice dose of Riesling grapes, mixes with a bit of sweet apple, a note of booze in the nose.

T:. Very reminiscent of champagne, some sweet apple, a bit of peach, a note of booze, finishes fairly dry.

F:. Highly carbonated, light to medium body.

O:. Very nice take on a sparkling wine type beer.
