On tap. Poured a cloudy, straw-yellow color with a small, white head of foam. It smelled of hay, cracked wheat and yeast. Sweet wheat taste with Belgian-fruitiness and subtle spices.

A = Not too hazy but cloudy golden appearance
S = Pale Wheat is prominent, yeast
T = A subtle smokey and spicy/coriander taste complemented by a light citrus/orangy flavor
M = smooth crisp feel, decent amount of carbonation
O = Very well put together, balanced very well. Pleasant experience.

a tasty and relatively traditional wit, super well refined in the glass, and very drinkable. the belgian yeast is familiar, but its well restrained ester profile shows a careful attention to detail, and the subtle layering of some coriander and citrus is nicely done, its balanced and flavorful without being intense at all. the wheat malt is really light in this, and i taste some pils type grain here too, crackery and earthy and minimal and clean. there are light pepper notes, and some spiciness like anise and nutmeg even, but all just flashing in briefly before a pretty dry finish. some orange and lemon to this, a softly toasted note too, and some clover or other delicate white flowers. some honey sweetness in the center of it, a hint of lemongrass, and green pear too. great combination of flavors and all rather mellow. good carbonation on it but not crazy high, and this seems somewhat less advanced than a lot of their other beers from a recipe standpoint, but its as well done as any of them. i really was stoked on all the beers in here, and this is a great wit, very professionally made even though the yeast is relatively uninteresting.

Golden hued with excellent clarity. A fingernail of off white surrounds the rim and covers the majority of the top. The aroma is a balance of pale wheat and coriander. I’m tasting a well tuned blend of the pale wheat and a restrained touch of coriander. The mouth is soft and smooth.
