Every chapter tells a story, and this one begins with patience. Chapter 7 is our limited edition seventh-anniversary imperial stout, a deliberate and measured release marking a milestone.
This robust stout spent a full year aging in select bourbon barrels, a period of quiet transformation that has imbued it with remarkable complexity. The resulting beer presents deep notes of dark chocolate and roasted malt, gracefully intertwined with the sophisticated character of oak, vanilla, and a hint of warming spirit. It is a contemplative and rich experience, crafted for those who appreciate the narrative a truly aged beer can tell.

500 ml bottle with a good barrier of wax to break through to open. Remarkably I am drinking this fresh - released fall 2025. Split two ways.
Pours a very dark brown, pushing black with a finger of foamy brown head.
Aroma of dark fruit, cocoa, vanilla, and bourbon with hints of molasses.
Taste follows - dark chocolate, a touch of plum, dark fruit, vanilla and again the bourbon booziness - just a whisper of licorice.
Medium full mouthfeel - has some heft but not that rich thick body that sometimes can be overwhelming - decent carbonation, nice boozy warmth without being hot.
Solid and delicious barrel aged imperial stout.
