2018 vintage, batch 1, a really unique little beer here, just my second from these guys but something quite distinct, albeit subtly. the fermentation profile is awesome, not as sour as the label makes it seem like it will be, and more funky than acidic to me. its bubbly in mouthfeel but doesnt hold its head long in the glass, pale yellow in color with more and more sediment as we approach the bottom of the bottle. beautiful packaging on this by the way. it smells a bit sweet, like base elements of a classic tripel, an added sugar on top of the grain, a honey note, even a vanilla thing, likely from its time in oak. white wine tang, orchard fruit, pear and red apple to me, raw wheat, rustic saison esters, a whole lot going on yet also very cohesive. it tastes both young and mature in different respects, like the brett in here still has some work to do, but it is appreciable. the sourness is there to help dry out the finish but its not excessively acidic at all. the grain still tastes fresh to me, pils and wheat malts likely. the oak gives it that richness, roundness of feel, and patient sort of cadence, but it doesnt taste years old to me either. some light confectioners sugar character remains at the finish, meyer lemon and lemon cake nuance too, champagne and a hay or straw thing late as well. very cool mix of flavors here from all of the elements coming together. i need to get my lips on some more beers from these guys, i have been really impressed so far!
