Had Hi-Resolution at Tremont Tavern, Chattanooga, on draft into pint tumbler.
Pours gold with crystal clarity and 1/2-finger near-white head, with decent retention but leaving little lace. Moderate aroma of grassy hops off pour, then aromas of dank resin and of subtle fruit, including pear, white wine grape, and a little peach, all adding up to a bit of a cognac feel. Begins very dry, then mouthfilling pilsner malt with a hint of sweetness fills in, leading into big biting hops, and finally to a smooth but dry, biting finish.
Complex but unfortunately muted fruity aromas lead into a West Coast IPA of the driest kind. Choosing between bigger aroma, with more fruity flavor, and bigger ABV, with more cognac-like flavor, might make for a better beer. Or two beers!
