i dont think the menu called this out as a brett beer when we were in, and i dont think it tasted particularly bretty, maybe there is a clean saison yeast version too? my guess is that has a little brett in it late, but its a french saison type, clean and estery, that does the bulk of the flavoring, thinking about more funkiness is exciting though, this beer seems built to handle it well. someone let me know if there are in fact two different versions of this, but i dont suspect there are. in any event, the sage is nice with the white peppery esters of the saison strain, earthy and herbal and natural, almost gin-like in the flavor, and it responds well to the little bit of sweetness this has from the grain. the base is wheaty and simple, cleaner than most, with some body but also great carbonation and freshness to it, a honey note brings out the best of the sage, and this is the stage where i now think some more mature brett would be cool, if its in here, its mighty young. that said, this is still very well made, unique, and flavorful, even if the ferment isnt the part that makes it interesting. great hangover beer, warms up well too, recommended.

Taster at brewery. Light golden pour, small frothy head. Aroma is savory, sage, herbal. Light sage continues throughout the taste, adding soft citrusy notes and a mild bitter bite.
