super heady wild beer here with foraged herbs and woodruff, bottle procured on site, shared with the boys. impressive operation here, such creative beers, humble and unpretentious too. this is clever, neat to see woodruff as an actual ingredient and not added as a syrup berliner style. this is lightly haze from the bottle, average white headed, and pale orange toned, a little malt depth to enrich the thing, balance some bitterness from the herbs, and extend it some, i think a smart call and it doesnt make this less delicate. the nose cranks with meadow vibes, clover flowers, grasses, and organic seeming grain, its simple in some ways, but its also subtle fascinating, a little tea character, lemon verbena maybe, dried flowers, and a hint of honey. the ferment is really neat, smells more funky than sour, tastes a little more acidic and bacterial, but still with neat wild yeast funk as well, pretty dynamic and pleasantly dry through the back half. the green glass impacts this in a positive way, a little skunky funk, some slight oxidation, almost a fantome vibe, a high compliment indeed. the woodruff is most apparent as it warms in the nose, and then in the finish of each sip, herbal and lightly spicy, floral, and even kind of wet woody, sawdust or something. i get some citrus in the acidity, it gets quite sour, some bitterness from the herbs, and an almost dandelion property in the aftertaste, a touch flat for the style, but it slows it down in a good way too, could be intentional. very cool beer, a fun one to share, contemplate, and discuss. i think of all the beers we had when we were over there together, the yonder stuff on the whole stood out the most to me. these guys really are creating some special beers, and it was a joy to be able to drink on some of them with my homies. this is really unique, the best use of woodruff i have ever known in a beer, and it has a rad wild ferment to it. delicious.
