Oude Gueze
Traditionally made with a blend of young (1 year) & old (3 years) lambics. The young lambic provides body and sweet playfulness while the old offers a complex tangy sourness with a full-spectrum wild yeast spice. We blended this with a small amount of apricots before bottling and re-fermenting. The result is almost wine-like, which is why Oude Geuze is considered the champagne of Belgium!
