SHIPA - Single Hop IPA
The Jackass hill - "One-eyed Jack SHIPA Series is an IPA style brewed with only a single variety of Hops all throughout the brewing process.
In this specialty brew we use a Chinook Hop.
Offering an IPA in this fashion we hope to help craft beer fans isolate the flavor & aroma profiles that spark their interest.
Except the hops this recipe incorporates all Colorado Ingredients.

just an appalling name for a beer (not to mention the name of the brewery), even if there is some historic or geographic significance, there is no way they cant do better than this. anyway, the beer is stellar, incredibly fresh and a new kind of chinook experience for me and i imagine both drinkers. this is a great hop, but one that has gotten a reputation as a bittering hop only, its high alpha sure, but it turns out that it excels in a dry hopping context too, little known fact, but its awesome when its like this, so oily and fruity and distinctive, still with some of its older school northwestern woodsy elements, but i get heavy cantaloupe, kiwi fruit, and an almost honey thing, dank like good weed, forward like its all cryo hops, and just an amazing expression of chinook, bad as the name of the beer is. the flavor is just killer, these hops like they are rarely demonstrated, and i think a lot of it has to do with freshness of course, but its just so appealing, juicy, and not all dry hopped and starchy and sloppy, but a pretty cleaned up and dialed in recipe. i was really impressed by this, and came into it sort of expecting the minimum. good enough to go back for, this one is an instant classic. it appears like they are using this garbage name as a series, but i would leave it here, this is next level with the chinook!
