Got one of the last bottles of this beer at the brewery. It was aged in barrels in a limestone cave on the grounds of the brewery in the Texas Hill Country. The makes says that the beer is made from almost all local ingredients including tiny critters from the open air and hops from Jester King.

In any event, this is a tasty wild ale. Poured from the bottle into a tulip glass. Bright orange yellow color with a good effervescent initial head and lacing. This is a beer that the interesting flavors unfold as it warms. Earthy, funky lemony smell and taste. Lemons with honey and later maybe some sage. Slightly sweet white wine. I am glad I bought two bottles!
