my first from these guys, shared generously by my friend, unique beer, but not super refined to me, maybe still young despite the fact that its a blend of one and two year old spontaneous beers, if the name didnt give that away. cave ales, cool that they ferment this in caves, uncommon, and i guess it does have some unique terroir, but to me this is supposed to be about the yeasts, the wild elements, and that aspect is a little underwhelming, light funk and light acidity, but neither all that well developed or mature or unique, and in a beer thats almost totally still, it left a little something to be desired. deep brass to light rust colored pour, clear through most of the small bottle, a little sediment on the bottom, no real head at all. tannins and white wine strong in the nose, some light oak, vanilla, dried apricot fruitiness, and piquant tang that doesnt carry much flavor, but makes my mouth water anyway, a little cheesy thing to this, a little sweat, musty. the flavor is similar, highly vinous with the acidity and fruity wrinkle, but also a little weird, almost metallic as it warms, sharp and without the funky wildness i was anticipating, especially for having some two year old ale in this blend. nothing like lambic, even with the aged hop factor coming through, not sure if this is super amateur or just immature, like maybe it will turn into something over time, i hope so, but im not all that confident in that outcome for it. close to still, lightly wheaty, bready and cereal forward at the foundation, some enjoyable honey and floral elements as it sits, but i came for the ferment, and thats the weakest part of this. i will reserve harsher judgement for the future, but i wanted more from this. the brewery seems awesome though, hope to try more of their stuff to get a better sense of what they are all about...
