Pours an orange amber color with a subtle white head on top, which quickly recedes to a layer of lacing at the rim of the glass.
Smells of mealy pear, a short glimpse of burned down wood and surprisingly flowery white wine grapes. The aromas of this also inherit a pleasant, well pronounced funk to it, lead by withered leaves, dried green apples and a whiff of dusty bookshelves.
Its mouthfeel is light, with a balanced, refreshing body to it, together with a slightly effervescent carbonation, showcasing the beer‘s higher complexity perfectly.
Tastes of matured, slightly fermented white wine grape skins, apricot pith and quince, along with a subtle mushroom and oak spiciness. Got a fuller bodied white bread and wood honey interplay going on, together with spicy garden herbs and a faint tropical fruit note among more present guava. Finishes with a peppery woodiness, lime zest and slightly roasted pistachios among a well nuanced astringency, leading to a finish defined by ripe yuzu, chamomile and white bread dough covered caramel.
A truly tasty use of Pinot Gris grapes in a spontaneously fermented beer, leading to an entirely unique and intriguing flavor profile, which comes together in a powerful and very enjoyable way.
