Franconian style Volbier.
Our version, as always, utilizes a single decoction mash process, and natural carbonation. German breweries tend to use malt from as close to their facility as possible, if they don’t malt their grain in house, so the natural choice was to utilize Virginia grown grain.
We hopped this amber lager with Spalter Select & Saphir, giving it perhaps a little more hop aroma than what many of the German-brewed examples express. Finally, we fermented ‘Tabolcloth’ cold and slow with one of our favorite lager yeasts; the once lost Franconian strain, lending it a softness that we feel is perfectly suited for malt driven lagers. We get notes of apricot preserves spread over toasted rye bread, a crisp fall breeze, graham crackers, hiking through the Upper Franconia countryside, pretzel crust & blurry evenings at bierkellers.

This light amber beer has a little bit of haze to it. The white head provides some lacing, in thin streaks. Nose is a bit of crusty bread with some notes of light brown sugar and some indistinct fruitiness paired with a hint of earthy spice. Carbonation brings a little bite to the medium light brew. Fairly balanced, there's a light brown sugar sweetness that carries from the nose to the opening. Neutral bitterness washes this away by mid-taste. As the beer dries out into the finish, a little bit a spicy hops comes out. Other notes include a bit of bread and a bit of citrus rind, with the latter being inconsistent and fleeting. The bread becomes a bigger part of the profile, nicely so.
