In a world where the naming of beer is a mere suggestion instead of a disciplined approach to beer making, its nice to see a brewer's clear understanding of style. Fusion Brewing gets back to basics, and proper ones at that when heading into this sour Gose.
Sativa pours with a deep and rustier chrome color and cloudy with wheat before crowning with a creamy white froth. With a twinge of acidity and an earthy scent of sourdough, the nose is bright with citrus, cider and wine with an earthier, breadier germ perfume. Moderately sweet to the palate, the early impressions are a pillowy blend of fresh bread, honeysuckle and wafer.
As the flavors evolve across the middle palate, its sweetness patiently drifts and the sourness builds in with those fruitier notes of green apple, white grape, lemon, lime, peach and pear. Trending briskly tart, the late palate comes with a sense of brine and a drift of damp burlap as the beer prefers a piquant tanginess for balance instead of hop bitterness.
Medium bodied and feeling right at home for a traditional Gose, this rustic, unrefined and earthier character of the beer gives us a taste of history in a fairly accurate form. The sour beer finishes both malty and tart with an extension of sea air, burlap and sourdough once more.
