A southwestern-inspired variant conditioned on ancho chilis, vanilla, and cinnamon. We can’t help but be transported to the big beautiful open sky somewhere between Albuquerque and Santa Fe. This might just be a new favorite stout of ours.

Poured into a Fremont small snifter. Pours a very dark mahogany brown, appearing nearly opaque black in the glass with a somewhat fizzy, half finger dark khaki head that dissipates to sparse patches and a few bubbles around the glass. Aroma of dark toasted malt, hot peppers, cinnamon, vanilla and mild cocoa. Flavor is dark toasted malt, vanilla, lactose, hot peppers, a touch of green pepper and cocoa. Medium bodied with light to moderate creaminess. A solid, flavorful milk stout base with nice green and hot pepper. Vanilla and lactose combine to support the pepper flavors with a light cocoa character that is not intense enough to taste quite like Mexican chocolate, although wisps of that flavor appear during the taste. Pepper hotness is appropriately noticeable without being dominating. This is flavorful and not the usual chocolatey presentation used with peppers and cinnamon. Enjoyable and different. The lovely head did not last long enough, though, for some reason.

On draft. Poured an opaque, jet-black color with a small, light brown head of foam. It left sudsy traces of lace on the glass. It smelled of chilis. cinnamon, vanilla and chocolate. Very spicy with chocolate, caramel, vanilla and cinnamon. Mild bitterness.

Pours black with a finger of tan foam. Aroma is spices, pepper, milk chocolate, and roasty & toasty malts. Vanilla and faint fudge become more apparent as the beer warms, but are never a focal point. Flavor profile is spices, peppers, then vanilla bean. Late fudge and chocolate elevate the complexity at the finish alongside peppers and vanilla. Roasty and toasty malts underneath, forming a steady base. Mouth feel is medium-thick with a creamy, decadently velvet texture. Overall, thick, filling, and rewarding. Peppers are well balanced into the mix, being opposed to vanilla bean and chocolate.

Pours completely black; brown head that dissipates quickly. The aroma comes off as dark chocolate (which isn’t in the beer) with a hint of cinnamon (which is). The taste combines those flavor elements with a slight heat from ancho chiles. The mouthfeel is full, and finishes a little warming from both the alcohol and the chiles..
