We lined up another rendition of Levels, which is an IPA that we use to experiment with hops that play well with one of our favorites, CITRA! This time around we went with Idaho Gem, which is an up-and-coming hop from Gooding Farms in Wilder, Idaho. Mysteriously enough, Idaho Gem has an unknown lineage but we’ve been keeping our eyes on it since the first time we rubbed it at last year’s harvest. Intense candy-like flavors and aroma from this combination have us in love. We get notes of tropical starburst, overripe melon, and a soft tangerine creamsicle-like finish.

Pours a pale orange that looks like a mix of banana and peach. Translucency is opaque. Head is two fingers of white foam. Aroma is peach, apricot, melon, and some rindy green hop at the back. Some mild tropical fruit notes, but not overly juicy. Flavor profile is melon, peach, apricot, tangerine, and resin and mild herbal hops. Grassy, green rindy hops come on more as the beer warms, especially at the finish. It's tropical fruit forward, but not dripping with sweetness of juice. Doughy malts and heavy yeast round out the flavor profile. Mouth feel is medium-thick with a light silt texture, especially at the start. Overall, a sticky and tropical fruit forward IPA that manages to pair up typical NE IPA juiciness with some sticky hop qualities.
