On a blistering hot day in June of 2022 we brewed a wheatwine with Kyle of Horus Aged Ales. Inspired by the classic strong ales of American brewing folklore, we modernized it with a big-time grain bill. This beer was fermented clean and cool with a neutral American yeast and then racked into Willett Bourbon barrels where it rested for 19 months. For this variant, we conditioned the beer on both raw and toasted coconut, as well as Tahitian and Madagascar vanilla beans. This beer was made without subtlety in mind, making way for innocuous cravings of caramel coconut macaroons, cherry ganache, and molasses cookies with bourbon icing. Drink now or risk under-indulgence.

Pours black with a finger or so of khaki foam. Aroma is coconut & vanilla with toffee, chocolate, and roasty & toasty malts behind. It has a little formidable barrel character that isn't too heavy or strong. Flavor profile dips right back to coconut & vanilla, adding smooth sweetness without pushing the balance out of wack. Roasty & toasty malts add support alongside rich barrel, bitter char, and sugary molasses. It's hefty, but not overweight. Mouth feel is thick. Texture is smooth, with a very soft velvety texture. Overall, some nice depth with the adjunct flavor note being not too potent, nor too soft. Balance is great.
Served in a 15.5oz Spiegelau tulip from a 500mL bottle.
