A barrel-aged treat that feels perfect for this time of year. A hearty winter ale blend that rested in Heaven Hill (10-year) barrels for 20-24 months and was then conditioned atop raw and toasted coconut, and cinnamon. The base beer brings out all of those rich praline, burnt sugar, and dried fruit notes and complements the oaky backbone with ease. We choose raw and toasted coconut for deep flavor saturation to mimic barrel character and give the beer some hefty weight on the tongue. The coconut eventually fades to a curtain closure of cinnamon, molasses, and deep winter woes.

Pours black with two fingers of khaki foam. A little oil clings to the top. Aroma is full spicy cinnamon then coconut. Roasty and toasty malts bond with caramel. Chocolate adds some additional sweetness at the finish after heavy, semi-bitter malts. Flavor profile is cinnamon and coconut right at open. Cinnamon is a bit more potent. Roasty and toasty malts work with caramel and chocolate and cocoa powder to produce layers upon layers of semi-bitter and semi-sweet notes. It is fairly spicy despite the decadence. Mouth feel is thick and full with a little creaminess to the texture. Overall, full. Cinnamon is great with coconut smoothing it out. Great contrast between the adjuncts to form balance.

Very dark brown body at the center, lighter on the edges, no head. Getting the cinnamon and coconut right away in the nose with the toasty barrels blending right in, hint of anise, fruit cake and raisin. Taste has more of the underlying style with great winter warmer yeast, almost has an impression of gingerbread supporting the fruit cake, cinnamon is a clear star, coconut, vanilla, bourbon, molasses, and raisin is the next defining layer of flavor. Very smooth and sneaky light but never thin, in fact it is soft and warming. This would be ideal for the holidays
