We harvested the yeast from our alpine pilsner (brewed with spruce tips), and fermented this beer with it to capture the alpine essence. We went with a hop blend of Mosaic, Simcoe, Chinook, and Chinook Cryo that showcases pine-forward notes alongside tropical, citrus, and dank threads that are crucial to our IPAs.

(review from December 2024) Solid, well balanced WC ipa with good mouthfeel; nice hoppy/bitter bite; a piney/malty/resiny/slightly sprucey flavor & a clean, dankish aftertaste. Very quaffable indeed.
